Millets and Blood Sugar: Can Traditional Indian Grains Support Better Metabolic Health?
TRADITIONAL GRAINS · NUTRITION & DIABETES · 10 MIN READ Millets have moved from traditional Indian kitchens into conversations about healthy eating, diabetes management, dietary fibre and sustainable agriculture. As consumers become more conscious of carbohydrate intake and blood sugar levels, grains such as ragi, jowar, bajra and foxtail millet are attracting renewed attention. For generations, millets have formed part of regional food cultures across India. Today, they are increasingly discussed as alternatives to refined cereal products and as ingredients in diets focused on nutritional diversity. THE BIG QUESTION Are millets actually better for blood sugar, and can they replace rice or wheat in a diabetes-friendly diet? The short answer: it depends on five things. Research suggests some millet-based foods may offer advantages in glycemic management, but not every millet product has the same effect. Understanding these differences helps you make informed decisions about millets, low glycemic index foods, diabetes nutrition and healthy Indian diets. ● ● ● THE RETURN OF TRADITIONAL GRAINS Why Millets Are Receiving Renewed Attention Millets are a diverse group of small-seeded cereal grains traditionally cultivated across several regions of India. They include pearl millet or bajra, finger millet or ragi, sorghum or jowar, foxtail millet, little millet, kodo millet and barnyard millet. These grains have historically been important in regions where agricultural conditions favour crops that can tolerate particular combinations of heat, rainfall variability and limited water availability. Their renewed popularity reflects several developments. Consumers are looking for alternatives to highly refined foods, exploring whole grains and seeking greater variety in their daily diets. Interest in dietary fibre, plant-based nutrition and traditional food systems has also contributed to the growing market for millet-based products. Millets are particularly relevant to discussions about food diversity because they offer different nutritional characteristics, flavours and culinary applications. However, the term millet does not describe a single nutritional profile. Different species contain different amounts of protein, fibre, minerals and starch. KEY TAKEAWAY The value of millets lies in their diversity, not in treating every millet as nutritionally identical. ● ● ● UNDERSTANDING BLOOD SUGAR What Happens When We Eat Carbohydrates? Carbohydrates are one of the body's primary sources of energy. During digestion, many carbohydrate-containing foods are broken down into glucose, which enters the bloodstream. Blood glucose levels rise after a meal, and the body uses insulin to help regulate the movement of glucose into cells. In people with diabetes, this regulatory process is impaired. As a result, blood glucose may remain elevated for longer or rise beyond the desired range. This is why the type, quantity and preparation of carbohydrate-containing foods are important considerations in diabetes management. Rice, wheat, millets, potatoes, fruits and many other foods contain carbohydrates, but they differ in composition and digestibility. Their effects also depend on how much is eaten and what other foods are included in the meal. KEY TAKEAWAY Managing blood sugar is not about eliminating carbohydrates. It is about carbohydrate quality, portion size and overall dietary balance. ● ● ● WHAT IS THE GLYCEMIC INDEX? Understanding Low-GI Foods The glycemic index, commonly called GI, is a measure used to compare the blood glucose response to carbohydrate-containing foods under standardised conditions. These categories provide a framework for understanding how quickly available carbohydrates from a food may raise blood glucose relative to a reference food. However, GI is not a complete measure of nutritional quality. A food with a low GI is not automatically rich in protein, fibre or essential micronutrients. Likewise, a higher-GI food may still provide useful nutrients as part of a balanced diet. The glycemic response also varies according to preparation, processing and individual physiology. This distinction matters when evaluating claims that millets are universally low-GI foods. KEY TAKEAWAY Some millet-based foods may have a relatively low glycemic response, but the GI of a millet cannot be assumed from its name alone. ● ● ● MILLETS AND DIABETES Can People With Diabetes Eat Millets? Millets are frequently recommended in discussions about diabetes-friendly diets because many varieties can provide dietary fibre, protein and micronutrients. KEY TAKEAWAY Millets can be part of a diabetes-conscious eating pattern, but their suitability depends on the individual and the specific food preparation. ● ● ● WHY DIETARY FIBRE MATTERS Whole grains, digestion and metabolic health Fibre is one of the main differences between whole grains and more refined cereal products. Depending on the grain and its processing, millets can provide fibre that does the following. Fibre content varies widely between millet species and products. Milling and removal of outer grain layers change it, so a whole-grain flour product can differ a lot from a refined millet snack. If you want high-fibre foods and healthy carbohydrates, look at the actual product, not just the word millet. ● ● ● RAGI, BAJRA AND JOWAR How Do Common Indian Millets Differ? Each millet has its own nutritional and culinary character. They are often grouped together as "healthy millets", but their compositions are not the same. A millet's suitability for a particular dietary goal depends on its characteristics, processing and role within the overall meal. ● ● ● MILLETS VS RICE VS WHEAT Which Grain Should You Eat Every Day? There is no single grain that is best for everyone. All three provide carbohydrates and can sit in a balanced diet. KEY TAKEAWAY A balanced diet is built through variety and appropriate portions—not by declaring one grain superior to every other grain. ● ● ● GLYCEMIC INDEX VS GLYCEMIC LOAD Why Portion Size Changes the Conversation Even a low-GI preparation in a large portion can deliver a lot of carbohydrate. A fried, sweetened or carbohydrate-heavy millet dish can also look very different from a simple wholegrain one. So look beyond GI claims and consider the complete meal. For people managing diabetes, portions and individual glucose responses are key parts of planning. ● ● ● DOES PROCESSING CHANGE THE BENEFITS OF MILLETS? From Whole Grain to Flour, Porridge and Packaged Snacks Cleaning, dehulling, milling and cooking change a grain's structure and nutrition. Whole-grain millet flour may keep more of the grain's original components than a refined product, depending on the grain and the process. A millet roti, a millet porridge and a packaged millet snack are not nutritionally equivalent by default. Read ingredient lists and nutrition labels when choosing millet products. KEY TAKEAWAY The presence of millet in a product does not, by itself, establish that the product is nutritionally superior. ● ● ● HOW TO BUILD A BALANCED MILLET-BASED MEAL Beyond the Grain on the Plate Millets fit into familiar Indian meals without a complete change in eating habits. A simple plate includes: Millets also work in porridge, khichdi-style dishes and other meals that combine grains with pulses and vegetables. The goal is a balanced meal, not one grain doing all the work. Meal composition and portion size deserve particular attention when managing blood sugar. A qualified healthcare professional or registered dietitian can help set suitable portions and carbohydrate distribution If you monitor your glucose your own readings can add useful information when interpreted with professional guidance. ● ● ● MILLETS AND SUSTAINABLE AGRICULTURE Why These Grains Matter Beyond Nutrition Many millet crops suit particular agroclimatic conditions and can be important in semi-arid and rainfed farming systems. It is more accurate to discuss millet sustainability in a regional agricultural context than to call all millets universally climate-proof. Interest in millets connects nutrition, agricultural biodiversity, traditional food culture and sustainable food systems. ● ● ● THE ROLE OF FARMER PRODUCER ORGANISATIONS Connecting Millet Farmers With Modern Markets Millet production is spread across many small farms and growing regions. Farmer Producer Organisations (FPOs) help communities aggregate produce, improve market access and connect with organised buyers. Success depends on market demand, infrastructure, quality management and fair commercial arrangements. The objective is not just to grow more millet. It is to create viable connections between farmers, processors, food businesses and consumers. ● ● ● THE BMS NATURALS CONNECTION Bringing Traditional Grains Closer to Consumers BMS Naturals follows a Farm-to-Fork approach that connects agricultural communities, Farmer Producer Organisations and consumers. Its sourcing network includes: The value of a traditional food depends on its nutrition and also on the farmers who grow it, how it is handled and how it reaches consumers. Sourcing visibility and quality management help people decide with more confidence. For millet products, the aim is to describe nutrition accurately while keeping the grain's agricultural identity. KEY TAKEAWAY Traditional grains deserve a place in modern diets when their value is supported by sound nutritional information, responsible sourcing and transparent product communication. ● ● ● MYTH OR FACT? From Traditional Millets to Informed Nutrition ● ● ● THE ROAD AHEAD From Traditional Millets to Informed Nutrition Millets offer a chance to reconnect traditional Indian food systems with modern nutritional awareness. Research suggests some millet-based dietary patterns may benefit glycemic management, but the evidence has to be read in the context of the specific grains, preparations and populations studied. Not every millet is low-GI, and millet products are not automatically suitable for everyone with diabetes. IN SHORT Millets are not a miracle solution to every nutritional challenge. They are a valuable part of India's diverse food heritage, and an opportunity to build more informed, balanced and resilient food systems. The goal is not simply to eat more millets. It is to understand our grains better, choose them thoughtfully and create stronger connections between the people who grow our food and the people who consume it.
Khapli Wheat: Benefits, Nutrition, Glycemic Index and Why This Ancient Grain Deserves a Place in Your Diet
TRADITIONAL GRAINS · NUTRITION & HEALTH · 10 MIN READ As consumers become increasingly conscious of their everyday food choices, traditional grains are returning to the centre of conversations about nutrition, dietary fibre, digestive health and balanced eating. Among these grains, Khapli wheat, also known as emmer wheat, is attracting attention for its heritage, distinctive characteristics and potential nutritional value. From people searching for Khapli atta benefits to those exploring low glycemic index foods, healthy wheat alternatives and diabetes-friendly diets, interest in this traditional grain reflects a broader shift towards understanding what goes into everyday staples. Wheat is a major source of carbohydrates in Indian diets, with atta used to prepare rotis, chapatis, parathas and numerous other foods. Yet not all wheat products are identical. The grain variety, milling process, degree of refinement, preparation method and accompanying foods can all influence the nutritional composition of a meal. Khapli wheat offers an opportunity to explore these differences while reconnecting with India's agricultural heritage. However, understanding its benefits requires separating established nutritional facts from claims that still need stronger scientific evidence. The real value of Khapli wheat lies in understanding the grain, its nutritional composition, how it is processed and how it fits into a balanced diet. THE STORY OF KHAPLI WHEAT What Is Khapli Wheat? Khapli wheat is the name commonly used in India for emmer wheat, an ancient wheat species scientifically known as Triticum turgidum subsp. dicoccum. Unlike the common bread wheat varieties widely used for commercial flour production, emmer belongs to an older group of cultivated wheats with a distinctive agricultural history. It has been grown in different regions for generations and remains relevant to discussions about traditional grains, agricultural biodiversity and heritage foods. Khapli wheat is often associated with traditional cultivation practices and regional food cultures. Its renewed popularity is connected to the growing interest in whole-grain foods, traditional Indian ingredients and alternatives to highly refined cereal products. However, the term ancient grain describes agricultural history rather than automatically establishing superior nutritional value. Modern wheat varieties can also provide important nutrients, and the nutritional differences between wheat varieties depend on their specific characteristics and how they are grown and processed. Khapli wheat should therefore be understood as a distinctive traditional grain with its own nutritional and culinary properties, rather than as a universally superior replacement for every other wheat variety. Why Are Consumers Becoming Interested in Khapli Wheat? Several developments have contributed to the growing interest in traditional grains. Consumers are paying greater attention to ingredient lists, the degree of food processing, dietary fibre intake and the nutritional quality of everyday meals. Interest in blood sugar management has also encouraged people to examine the carbohydrates they consume regularly. At the same time, traditional Indian foods are gaining attention among consumers who want to reconnect with regional agricultural practices and familiar food cultures. These interests have brought products such as Khapli atta into conversations about: Traditional Indian grains and heritage wheat varieties. Whole-grain flour and dietary fibre. Healthy carbohydrates and balanced nutrition. Glycemic index and blood sugar management. Traditional agriculture and crop diversity. Minimally processed foods and ingredient transparency. These are legitimate areas of interest, but each requires its own evidence. A grain's traditional status, for example, does not automatically prove that it has a low glycemic index or that it is suitable for every dietary requirement. KHAPLI WHEAT NUTRITION Understanding the Nutritional Composition of Emmer Wheat Khapli wheat provides carbohydrates, which are an important source of energy. Like other wheat varieties, it also contains protein and can contribute dietary fibre and minerals, depending on the grain and the processing method. The exact nutritional composition varies with the variety, growing conditions, harvesting practices, storage and milling. One particularly important distinction is whether Khapli wheat is sold as whole-grain flour or as a more refined product. Whole-grain flour generally retains the bran, germ and endosperm in their natural proportions. These components contribute different nutritional elements. The bran contains much of the grain's fibre, while the germ contains fats and several micronutrients. The endosperm supplies much of the grain's starch and protein. When substantial portions of the bran and germ are removed during milling, the nutritional composition of the resulting flour changes. This means that two products made from the same wheat variety may not provide identical nutritional value. For consumers comparing Khapli atta with regular wheat flour, it is therefore important to consider both the grain variety and the type of flour being purchased. Is Khapli Wheat Higher in Protein? Emmer wheat has been studied for its protein content and composition. However, protein levels can vary considerably between varieties and growing environments. It would be inaccurate to assume that every Khapli wheat product contains more protein than every modern wheat product without comparing reliable nutritional data for the specific products. Protein intake also depends on the amount of flour consumed and the other foods included in the diet. For people seeking to increase protein intake, wheat-based meals can be combined with protein-rich foods such as dal, chickpeas, rajma, curd, paneer, eggs or other suitable sources. The nutritional value of a meal depends on the complete combination of foods, not simply the variety of flour used. KHAPLI ATTA AND DIETARY FIBRE Why Fibre Matters for Digestion and Everyday Health Dietary fibre is an important component of a balanced diet, yet many diets rely heavily on refined cereal products and contain relatively little fibre-rich food. Fibre contributes to normal bowel function and can support digestive health. Depending on the type and amount consumed, it can also influence satiety and the digestion and absorption of nutrients. Whole grains are one way to increase fibre intake. When Khapli wheat is milled into whole-grain atta with its bran retained, it can contribute dietary fibre to everyday meals. The actual amount depends on the product's composition and processing. This is an important distinction because the word Khapli alone does not tell consumers how much fibre a particular flour contains. For a more meaningful comparison, look for nutritional information and check whether the product is made from whole-grain wheat. How Can You Include More Fibre in Your Diet? Khapli atta can be incorporated into a varied Indian diet through familiar preparations such as rotis and chapatis. However, fibre intake should not depend on one grain alone. Vegetables, fruits, pulses, beans, nuts, seeds and other whole grains can all contribute to daily fibre intake. A meal containing whole-grain roti, dal and vegetables can provide a wider range of nutrients than a meal built around a single food. Increasing fibre intake gradually and drinking adequate fluids can also help people adjust more comfortably to a higher-fibre diet. For better digestive health, the goal is dietary diversity rather than dependence on a single ingredient. KHAPLI WHEAT AND THE GLYCEMIC INDEX Is Khapli Atta a Low-GI Food? One of the most common questions about Khapli wheat concerns its glycemic index. The glycemic index (GI) is a measure used to classify carbohydrate-containing foods according to their effect on blood glucose compared with a reference food under standardised testing conditions. Foods with a higher GI generally produce a faster rise in blood glucose than foods with a lower GI, although an individual's actual response can vary. Interest in low-GI foods has grown among people seeking to understand post-meal blood sugar changes and make informed dietary choices. Khapli wheat is sometimes marketed as a low-GI alternative to conventional wheat flour. However, this claim requires careful evaluation. Although research has investigated emmer wheat and its nutritional properties, the evidence does not justify assigning one universal GI value to every Khapli wheat product. The glycemic response can be influenced by several factors: Grain variety: Different wheat varieties can differ in starch composition and other characteristics that influence digestion. Milling: The degree of refinement affects the composition of the flour. Food preparation: Dough preparation, cooking method and the final structure of the food can influence starch digestibility. Portion size: The amount of carbohydrate consumed affects the total carbohydrate load of a meal. Meal composition: Protein, fat and fibre from other foods can influence the overall post-meal glucose response. Consequently, Khapli atta should not automatically be classified as low-GI without reliable testing of the specific product. Why Does This Distinction Matter? A product can contain beneficial nutrients without necessarily having a low glycemic index. Similarly, a food with a low GI is not automatically appropriate in unlimited quantities or suitable for every individual. Consumers should therefore distinguish between the nutritional composition of Khapli wheat and claims about its measured glycemic response. The scientifically responsible approach is to evaluate the evidence for the specific product rather than assume that every traditional grain has the same metabolic effect. KHAPLI WHEAT AND DIABETES Can People With Diabetes Eat Khapli Atta? Diabetes management often involves paying close attention to carbohydrate intake because carbohydrate-containing foods influence blood glucose. Wheat-based foods, including chapatis and rotis, can form part of an individual's diet, but their quantity and composition matter. The suitability of Khapli atta for someone with diabetes depends on factors including portion size, the overall meal, individual glucose responses and the person's dietary requirements. It is not scientifically appropriate to describe Khapli wheat as a treatment for diabetes or guarantee that it will control blood sugar. Choosing whole-grain flour may help increase fibre intake compared with some refined alternatives, but that does not establish a specific glucose-lowering effect for every Khapli wheat product. How Can You Build a More Balanced Meal? For people managing diabetes, meal composition can be as important as the choice of staple. A meal may include: A suitable portion of wheat-based roti or another carbohydrate source. Dal, beans, chickpeas or another appropriate protein source. Non-starchy vegetables. A suitable amount of fat. Other foods according to individual nutritional needs. This approach creates a more balanced meal than relying on a large portion of one carbohydrate-rich food alone. However, individual requirements differ. People with diabetes should follow a personalised dietary plan developed with a qualified healthcare professional or registered dietitian when appropriate. Khapli wheat may be one option within a balanced diet, but it should not be presented as a substitute for diabetes treatment or medical advice. GLYCEMIC INDEX VS GLYCEMIC LOAD Understanding Two Important Nutrition Terms The glycemic index and glycemic load are related, but they measure different things. The glycemic index describes the relative blood glucose response to a standardised amount of available carbohydrate from a food. Glycemic load considers both the GI and the quantity of available carbohydrate in the portion being eaten. This distinction helps explain why portion size remains important even when a food has a relatively low GI. For example, eating a large portion of a carbohydrate-rich food can provide substantially more carbohydrate than eating a smaller portion of the same food. The overall meal also matters. A roti eaten with dal and vegetables creates a different nutritional combination from a meal consisting primarily of rotis. These principles apply to Khapli wheat just as they apply to conventional wheat, rice, millets and other carbohydrate-containing foods. Consumers exploring low-GI foods, healthy carbohydrates and diabetes-friendly diets should therefore consider portion size, meal composition and the evidence behind specific GI claims. KHAPLI WHEAT VS REGULAR WHEAT What Is the Difference? The differences between Khapli wheat and conventional bread wheat begin with their botanical classification. Khapli wheat is an emmer wheat, while the wheat most commonly used for commercial bread and atta production generally belongs to bread wheat, Triticum aestivum. These are different wheat types, and their grain characteristics and nutritional composition can vary. However, a simple comparison between the two requires more than looking at the variety names. Comparison factor Khapli wheat Conventional wheat Grain type Emmer wheat Commonly bread wheat Agricultural background Traditional wheat type Widely cultivated modern wheat varieties Carbohydrates Present Present Protein Amount varies by variety and growing conditions Amount varies by variety and growing conditions Dietary fibre Depends on the grain and degree of milling Depends on the grain and degree of milling Glycemic index Requires evidence for the specific product and preparation Also varies with variety, processing and preparation Gluten Contains gluten Contains gluten Culinary use Can be used for rotis and other wheat-based preparations Used for rotis, breads and many other preparations The table illustrates an important point: the nutritional properties of a grain cannot be determined by its name alone. A whole-grain conventional wheat flour may provide more fibre than a highly refined Khapli flour. Conversely, specific emmer products may have nutritional characteristics that differ from those of particular conventional wheat products. For a meaningful comparison, consumers should examine the actual flour, its processing method and its nutritional information. IS KHAPLI WHEAT GLUTEN-FREE? An Important Consideration for Digestive Health Khapli wheat contains gluten. Gluten is a group of proteins found in wheat and certain other grains. It contributes to the structure and elasticity of many wheat-based doughs. Because Khapli wheat is a type of wheat, it is not suitable for people with coeliac disease and should not be considered a gluten-free alternative. People with a wheat allergy must also exercise caution and seek appropriate medical advice. Some consumers report that particular wheat products feel different to digest, but individual experiences do not establish that Khapli wheat is universally easier to digest than modern wheat. Digestive symptoms can have multiple causes and should not automatically be attributed to one grain. For anyone who needs to avoid gluten, choosing an ancient wheat variety is not a safe substitute for selecting genuinely gluten-free foods. KHAPLI WHEAT AND TRADITIONAL FOOD CULTURE Why Ancient Grains Are Returning to the Indian Kitchen Traditional grains are attracting attention as consumers reconsider the relationship between agriculture, food processing and nutrition. For generations, regional Indian diets were shaped by local crops, climatic conditions and agricultural practices. Different grain varieties became part of regional food cultures, creating a diverse agricultural and culinary heritage. Modern agriculture has improved productivity in many contexts, but the widespread cultivation of a narrower range of commercial varieties has also made agricultural diversity an important subject of discussion. Traditional grains such as emmer wheat offer an opportunity to explore this diversity. Their value includes more than nutritional composition. They also represent agricultural knowledge, regional food traditions and genetic resources that may be relevant to future crop improvement. However, preserving traditional grains requires practical economic conditions. Farmers need viable markets, consumers need reliable product information, and food businesses need appropriate sourcing and quality-management systems. Traditional food heritage can remain relevant when it is supported by informed consumption and sustainable agricultural value chains. KHAPLI WHEAT AND AGRICULTURAL BIODIVERSITY Why Preserving Different Grain Varieties Matters Agricultural biodiversity refers to the diversity of crops, varieties and genetic resources within agricultural systems. Maintaining this diversity can be valuable for agricultural research, crop improvement and the long-term resilience of food systems. Different wheat varieties possess different genetic and physical characteristics. Researchers can study these characteristics to understand how grain quality, productivity and adaptation vary across environments. However, it is important not to assume that every traditional variety is automatically more drought-resistant, sustainable or productive than modern wheat. Such properties depend on the specific variety, growing environment and farming practices. The case for preserving traditional grains is stronger when it is based on agricultural diversity, cultural heritage, scientific investigation and viable market opportunities rather than broad claims that all ancient grains are inherently superior. HOW TO USE KHAPLI ATTA IN EVERYDAY COOKING Bringing Traditional Wheat Into Modern Meals Khapli atta can be incorporated into familiar Indian preparations. Its dough characteristics may differ from those of conventional wheat flour, so the quantity of water, resting time and kneading technique may need adjustment. Khapli wheat roti: Use Khapli atta to prepare rotis or chapatis, adjusting water according to the flour's absorption characteristics. Vegetable-based meals: Pair Khapli rotis with vegetables and an appropriate protein source to create a more balanced meal. Pulses and legumes: Dal, chickpeas and beans can contribute protein and fibre alongside a wheat-based staple. Traditional recipes: Khapli flour can be explored in suitable regional recipes, provided the recipe accounts for its dough properties. Portion awareness: As with other wheat-based foods, the quantity consumed should reflect individual energy requirements and dietary needs. The goal is not to transform every meal overnight. It is to make informed choices that fit naturally into existing eating habits. HOW TO STORE KHAPLI ATTA Protecting Flour Quality After Purchase The quality of flour depends not only on the grain but also on how it is stored. Whole-grain flours contain components that can be more susceptible to deterioration during storage than highly refined flours, particularly when exposed to heat, air and moisture. To maintain quality: Store Khapli atta in a clean, dry, airtight container. Keep it away from direct sunlight and excessive heat. Protect the flour from moisture and insects. Follow the manufacturer's storage instructions. Check for unusual odours, visible contamination or changes in appearance. Purchase quantities that can be used within the recommended storage period. Appropriate storage helps preserve the product's quality and reduces the risk of deterioration. For food businesses, similar principles extend throughout the supply chain—from harvesting and drying to transportation, milling and packaging. WHAT SHOULD CONSUMERS CHECK BEFORE BUYING KHAPLI ATTA? Product Transparency Matters As interest in Khapli wheat increases, consumers may encounter a wide range of products making claims about nutrition, digestion, glycemic index and overall health. The most useful approach is to examine what the product information actually establishes. Check the grain identity. Confirm that the product is identified as Khapli or emmer wheat and that the ingredients are clearly stated. Check the degree of processing. Determine whether the flour is whole-grain or refined. The name of the wheat variety alone does not establish fibre content. Review nutritional information. Compare available information on protein, fibre, carbohydrates and other relevant nutrients. Look for credible evidence behind health claims. A claim that a flour is low-GI should be supported by suitable testing rather than inferred from the grain's traditional status. Understand gluten content. Khapli wheat is not appropriate for a gluten-free diet. Consider sourcing and storage. Clear product information and appropriate handling are important parts of food quality. These considerations help consumers evaluate traditional grains without relying solely on promotional language. THE BMS NATURALS CONNECTION Connecting Traditional Food With Responsible Sourcing BMS Naturals follows a Farm-to-Fork approach that focuses on strengthening connections between agricultural communities, Farmer Producer Organisations and consumers. Its sourcing network includes grains, pulses, honey and oilseeds, linking agricultural production with the wider food value chain. This philosophy is relevant to the growing interest in traditional grains such as Khapli wheat. The value of a traditional grain is connected not only to its nutritional composition but also to the farmers who cultivate it, the conditions in which it is handled and the way it reaches consumers. Responsible sourcing and transparent product information can help consumers understand the agricultural story behind their food. For heritage grains, this connection is particularly important. Maintaining consumer interest in traditional varieties can support their continued presence in the market, provided farmers have viable production and selling opportunities. The broader objective is to connect agricultural heritage with modern expectations around food quality, transparency and informed consumption. Farm-to-Fork is not simply about moving food from one location to another. It is about building a clearer connection between the people who grow food and the people who consume it. “Traditional grains do not need exaggerated health claims to be valuable. Their real significance lies in their agricultural heritage, nutritional contribution and place within a diverse food system.” THE ROAD AHEAD From Ancient Grain to Informed Food Choice Khapli wheat represents an important part of the wider conversation about traditional grains, whole-grain flour and the future of everyday nutrition. As emmer wheat, it offers a distinct alternative within the broader category of wheat products. Its nutritional contribution depends on its composition, degree of milling and role within the overall diet. When consumed as whole-grain flour, it can contribute dietary fibre alongside carbohydrates and protein. However, responsible nutrition requires clarity about what is known and what remains uncertain. Khapli wheat should not automatically be described as low-GI, gluten-free or a treatment for diabetes. Its glycemic response depends on the specific product and preparation, while its gluten content makes it unsuitable for people who must avoid gluten. For consumers, the most practical approach is to choose products with clear ingredient and nutritional information, consider whole-grain options where appropriate, maintain dietary variety and build balanced meals around individual nutritional needs. For agriculture, traditional grains provide an opportunity to preserve crop diversity, strengthen connections with farming communities and maintain regional food traditions. For food businesses, the responsibility is to communicate these qualities accurately and support consumer choices with transparency. The future of healthy eating is not about declaring one grain universally superior. It is about understanding the nutritional qualities of different foods, preserving agricultural diversity and making informed decisions about what we eat every day. Khapli wheat deserves attention not because it promises a miracle, but because it brings together three important conversations: traditional food heritage, modern nutritional awareness and a more transparent connection between farmers and consumers.
Kala Namak Rice and Blood Sugar: Understanding Traditional Rice, Glycemic Index and Diabetes
TRADITIONAL GRAINS · NUTRITION & HEALTH · 10 MIN READ Rice has been a staple of Indian diets for centuries. Yet, in recent years, the conversation around rice has changed. With growing awareness of diabetes, blood sugar, glycemic index, healthy carbohydrates and low-GI foods, many consumers are beginning to ask a simple question: Does eating rice necessarily mean higher blood sugar? The answer is more nuanced than a simple yes or no. Rice is not one uniform food. Different varieties can have substantially different nutritional compositions and glycemic responses. Research on Indian rice varieties has demonstrated considerable variation in glycemic index, while factors such as starch composition, amylose content, resistant starch, processing and cooking can influence how quickly carbohydrates are digested. Among India's traditional rice varieties, Kala Namak rice, also known as Kalanamak rice, has attracted renewed attention for its distinctive aroma, heritage and connection to eastern Uttar Pradesh. But does that automatically make it a low glycemic index rice or a rice for diabetes? Not necessarily. Understanding that distinction is important for anyone looking for reliable information about Kala Namak rice, blood sugar, diabetes and glycemic index. THE RETURN OF KALA NAMAK An ancient rice with a distinctly Indian identity Kala Namak rice is a traditional aromatic rice variety associated with eastern Uttar Pradesh. Kalanamak Rice is recognised under India's Geographical Indications framework. ICAR describes Kalanamak as a short aromatic landrace from eastern Uttar Pradesh, known for its strong and pleasant aroma and distinctive grain and cooking qualities. Its significance therefore extends beyond nutrition. Kala Namak represents the agricultural diversity of India—the traditional rice varieties developed, cultivated and preserved by farming communities over generations. Today, as consumers become increasingly interested in traditional rice, heritage grains, Indian rice varieties and minimally processed foods, Kalanamak rice is receiving renewed attention. It is therefore useful to look at Kala Namak from several perspectives: Its traditional and regional identity Its nutritional characteristics Its starch composition Its glycemic response Its processing and cooking Its role in the Indian diet Its connection with farmers and agricultural heritage WHAT IS THE GLYCEMIC INDEX? Understanding the number behind “low-GI foods” The glycemic index (GI) is a measure used to classify carbohydrate-containing foods according to their effect on blood glucose compared with a reference food. Foods with a higher GI generally produce a faster rise in blood glucose, while lower-GI foods tend to produce a slower and smaller rise. This has made low glycemic index foods an important topic in nutrition, particularly for people managing diabetes or trying to better understand post-meal blood sugar responses. However, GI should not be interpreted in isolation. The amount of carbohydrate consumed also matters. This is why glycemic load (GL) can provide additional context, as it incorporates both the GI of a food and the amount of available carbohydrate consumed. In practical terms, a food's impact on blood sugar is influenced not only by: What you eat but also by: How much you eat + how it is prepared + what you eat with it. IS KALA NAMAK RICE A LOW-GI RICE? This is where the conversation needs to be precise Kala Namak rice is sometimes promoted online as a healthier or diabetes-friendly rice. However, there is an important distinction between its traditional nutritional reputation and scientifically established glycemic-index data. There is not enough reliable evidence to state that Kala Namak rice itself has a confirmed low glycemic index. This does not mean that Kala Namak is an unhealthy rice. It means that a specific GI value should not be assigned to the variety without appropriate testing. Scientific studies demonstrate that rice varieties can differ considerably in GI. One Indian study found GI values ranging from 70 to 80 across several varieties, while an aromatic traditional rice variety called Lalat recorded a GI of 50 in that study. Another study found that commonly consumed Indian varieties such as Sona Masuri, Ponni and Surti Kolam had GI values around 70–77 and were classified as high-GI foods. The important lesson is clear: Not every rice behaves the same way in the body. But the name, colour or traditional status of a rice cannot by itself establish its glycemic index. Therefore, the most accurate answer to “Is Kala Namak rice low GI?” is: Its GI should not be assumed to be low unless supported by variety-specific testing. KALA NAMAK RICE: POTENTIAL NUTRITIONAL & DIETARY CONSIDERATIONS Looking beyond the “healthy rice” label Searches for Kala Namak rice benefits, Kala Namak rice nutrition and Kala Namak rice nutritional value are becoming increasingly common. However, it is important to distinguish between established nutritional characteristics and health claims that have not been specifically demonstrated for Kala Namak rice. Kala Namak can be considered in the broader context of traditional rice varieties, where characteristics such as starch composition, amylose, resistant starch, dietary fibre, processing and cooking method can influence nutritional and glycemic outcomes. Potential areas of nutritional interest include: 1. Traditional grain characteristics Kala Namak is a traditional aromatic rice variety with a distinctive regional identity. Its value is not limited to a single nutritional characteristic. 2. Starch composition Like other rice varieties, Kala Namak contains starch, which contributes substantially to its carbohydrate content. The structure and digestibility of that starch can influence glycemic response. 3. Resistant starch Resistant starch is a form of starch that is not completely digested in the small intestine in the same way as rapidly digestible starch. Research on rice varieties has associated higher resistant-starch content with lower glycemic responses in some cases. However, this does not mean that every rice containing resistant starch is automatically a low-GI food. 4. Dietary context The nutritional value of rice should be considered as part of the overall meal. Pairing rice with vegetables, pulses, protein sources and other nutrient-dense foods can create a more balanced meal than consuming rice in isolation. 5. Processing and preparation Milling, polishing and cooking can influence the physical structure and digestibility of rice starch. Therefore, the rice in the final meal may behave differently from the raw grain. What about calories, protein and carbohydrates? The exact nutritional value of Kala Namak rice depends on the specific product, processing method and serving size. For this reason, calories, protein, carbohydrate, fibre and other nutritional values should be taken from verified laboratory testing or the product's nutrition label, rather than assumed from the variety name. Important: Nutritional characteristics should not automatically be converted into medical claims such as “prevents diabetes,” “controls blood sugar” or “cures diabetes.” RICE AND DIABETES Does having diabetes mean you must stop eating rice? Rice is often one of the first foods people are told to eliminate after being diagnosed with diabetes. But diabetes nutrition is more complex than simply removing one carbohydrate. The amount of carbohydrate, portion size, rice variety, degree of processing, cooking method and the other foods consumed in the same meal can all influence the overall glycemic response. Research has shown that different rice varieties can produce substantially different glucose responses. Studies have also investigated the relationship between characteristics such as amylose, resistant starch and glycemic response. This means the better question may not be: “Can someone with diabetes eat rice?” but rather: “Which rice, in what portion, prepared how, and as part of what meal?” For individuals with diabetes, personal dietary requirements vary. Rice choices and portions should be considered within an overall dietary plan and, where necessary, discussed with a qualified healthcare professional or registered dietitian. Is Kala Namak rice good for diabetes? There is currently insufficient evidence to categorically describe Kala Namak rice as a diabetes-friendly rice or to claim that it is specifically beneficial for diabetes. However, that does not mean that someone with diabetes must automatically avoid it. The appropriate choice depends on the individual's dietary requirements, portion size, overall meal composition and blood glucose response. WHY RICE VARIETY MATTERS Rice is not nutritionally identical across varieties Two varieties of rice can look similar on a plate but behave differently during digestion. Research has identified relationships between glycemic response and characteristics including resistant starch and amylose. In one study of Indian rice varieties, resistant starch was negatively correlated with GI and explained a substantial proportion of the observed variation in GI. Another study comparing a high-fibre rice with commercial white rice found that the higher-fibre variety had greater dietary fibre, resistant starch and amylose and produced a lower GI. At the same time, amylose alone does not explain everything. Research has shown that rice varieties with similar amylose levels can still differ in starch digestibility and glycemic response because of other physicochemical characteristics. This is why: “Healthy rice” cannot be defined by a single characteristic. THE ROLE OF RESISTANT STARCH A different way to look at carbohydrates Resistant starch is a form of starch that is not completely digested in the small intestine in the same way as rapidly digestible starch. It has attracted attention in nutrition research because of its relationship with digestion, gut fermentation and glycemic response. In rice research, higher resistant-starch content has been associated with lower glycemic responses in some varieties. This has contributed to growing interest in resistant starch, low-GI foods and traditional rice varieties. However, the presence of resistant starch does not automatically make a rice variety suitable for everyone with diabetes. The overall dietary pattern still matters. DOES BROWN OR TRADITIONAL RICE ALWAYS MEAN LOW GI? Colour is not enough It is tempting to assume that brown, red, black or traditional rice must automatically have a lower glycemic index than white rice. Scientific evidence does not support such a simple rule. Research has specifically shown that the glycemic index of rice cannot be reliably predicted simply from the colour of the grain. Similarly, the degree of milling can influence glycemic response. In one study of an Indian parboiled rice variety, brown rice had a lower GI than under-milled and white rice, while greater polishing was associated with higher glycemic responses. Therefore, consumers should look beyond visual appearance. The nutritional profile, processing, cooking method and portion all matter. This is particularly relevant when evaluating claims around brown rice, black rice, red rice, traditional rice and low-GI rice. WHAT ABOUT COOKING? Preparation can influence the final glycemic response The rice that enters the body is not exactly the same as the raw grain that comes out of the package. Cooking changes the structure of starch through processes such as gelatinisation. Cooking method, degree of cooking and subsequent handling can therefore influence digestibility and glycemic response. Studies comparing cooking methods and rice varieties have found differences in GI depending on the variety and preparation method. This makes the phrase “low GI rice” more complicated than it may appear on a product label or social-media post. The GI of a food is not simply a property of its name. It is the result of interactions between: Variety + composition + processing + preparation + digestion PORTION SIZE MATTERS GI is only part of the picture Even when discussing a lower-GI food, portion size remains important. A carbohydrate-containing food can contribute a significant amount of carbohydrate to a meal depending on the quantity consumed. This is one reason why glycemic load (GL) can provide additional context. Instead of looking only at how quickly carbohydrate may affect blood glucose, GL also considers the amount of available carbohydrate consumed. For anyone managing blood sugar, the practical takeaway is straightforward: A food's glycemic effect depends not only on what it is, but also on how much is consumed. THE INDIAN PLATE MATTERS Rice does not have to be eaten alone A typical Indian meal rarely consists of plain rice by itself. Rice may be eaten with dal, rajma, chana, vegetables, curd, paneer, fish, eggs or other foods. This matters because the overall meal provides a combination of carbohydrates, protein, fat and fibre. For example, combining a carbohydrate-rich staple with protein-rich pulses and fibre-rich vegetables creates a nutritionally more complete meal than consuming the carbohydrate source in isolation. This does not mean that meal combinations eliminate the effect of carbohydrates on blood glucose. It simply reinforces an important principle: Nutrition should be evaluated at the level of the overall meal and dietary pattern, not only one ingredient. KALA NAMAK AND TRADITIONAL FOOD CULTURE Health is only one part of its story The growing interest in Kala Namak should not be limited to the question of diabetes. Its importance also lies in agricultural heritage. Traditional rice varieties represent genetic and cultural diversity within India's food system. Their preservation can support agricultural biodiversity while maintaining connections with regional food traditions. ICAR has described Kalanamak as a traditional aromatic landrace of eastern Uttar Pradesh and has documented breeding efforts aimed at improving its productivity while retaining its characteristic quality traits. This makes Kala Namak relevant to a much broader conversation about: traditional grains, crop diversity, sustainable agriculture, farmer livelihoods and India's food heritage. FROM TRADITIONAL GRAIN TO MODERN FOOD CHOICE Why consumers are looking beyond conventional staples The growing interest in traditional rice varieties reflects a broader shift in consumer behaviour. People are increasingly asking questions about: Where was the grain grown? Which variety is it? How was it cultivated? How much has it been processed? How was it stored? Can its origin be traced? What is its nutritional profile? These questions are particularly relevant as consumers move towards clean-label foods, minimally processed foods, traditional Indian foods and farm-to-fork products. The modern consumer is not simply buying rice. Increasingly, they are looking for information about the agricultural and processing story behind it. THE FARMER CONNECTION Preserving traditional rice also means preserving agricultural knowledge Traditional crops survive because farmers continue to cultivate them. Maintaining demand for heritage varieties can therefore create an economic connection between consumer preference and agricultural conservation. Farmer Producer Organisations can play an important role in this ecosystem by aggregating produce, supporting market access and helping connect farmer communities with organised food businesses. This is particularly important for traditional varieties that may have smaller production ecosystems compared with highly commercialised mainstream crops. The future of traditional rice therefore depends not only on consumer awareness. It also depends on: Farmer viability + market access + quality management + reliable value chains THE BMS NATURALS CONNECTION Bringing traditional Indian food closer to the consumer BMS Naturals' Farm-to-Fork approach is built around creating stronger connections between agricultural communities, Farmer Producer Organisations and consumers. Its sourcing network includes traditional agricultural products such as grains, pulses, honey and oilseeds, helping connect farmer collectives with the organised food value chain. The same philosophy is relevant to traditional rice. A product such as Kala Namak is not simply a grain inside a package. It represents: A crop + a region + farmers + agricultural practices + a food tradition that has continued across generations. The opportunity for modern food businesses is to preserve that agricultural identity while applying appropriate quality, processing and traceability standards. For consumers, this creates a more meaningful connection between traditional food, farmer communities and the modern Indian kitchen. FREQUENTLY ASKED QUESTIONS Is Kala Namak rice good for diabetes? There is not enough variety-specific evidence to categorically describe Kala Namak rice as a diabetes-friendly rice. People with diabetes should consider portion size, preparation, overall meal composition and their individual dietary requirements. Is Kala Namak rice low GI? A low GI value should not be assumed for Kala Namak rice without reliable variety-specific testing. Rice GI can vary according to variety, starch composition, processing and cooking. What is the glycemic index of Kala Namak rice? A confirmed GI value for Kala Namak rice should be based on appropriate testing of the specific variety and preparation. Published GI values from other rice varieties should not automatically be applied to Kala Namak. Can diabetics eat Kala Namak rice? Whether someone with diabetes can include Kala Namak rice depends on their individual dietary plan, portion size and overall meal composition. A qualified healthcare professional or registered dietitian can provide personalised guidance. Is Kala Namak rice healthier than white rice? It is not accurate to declare one rice universally healthier than another. Nutritional characteristics can differ between varieties, while processing, cooking and portion size can also influence dietary outcomes. What are the benefits of Kala Namak rice? Kala Namak's significance includes its traditional identity, distinctive aroma, regional heritage and place within India's agricultural biodiversity. Its specific nutritional or health benefits should be evaluated using verified nutritional and scientific evidence rather than broad claims. What is the nutritional value of Kala Namak rice? The nutritional value depends on the specific product and processing. For exact calories, carbohydrates, protein, fat, fibre and micronutrient values, consumers should refer to verified laboratory analysis or the product's nutrition label. Does cooking affect the glycemic index of rice? Yes. Cooking can change starch structure and digestibility, and studies have found differences in glycemic response depending on rice variety and preparation method. Does the colour of rice determine its GI? No. Rice colour alone cannot reliably determine glycemic index. Variety, starch characteristics, processing, cooking and portion size can all influence glycemic response. THE ROAD AHEAD From “healthy rice” to informed rice choices The discussion around rice and diabetes is often reduced to a simple choice between eating rice and avoiding it. The science is more complex. Different rice varieties can have different glycemic responses. Processing, polishing, cooking, starch characteristics and portion size can all influence the way rice affects blood glucose. For Kala Namak rice, the most responsible conclusion is therefore not to label it automatically as a low glycemic index rice or a diabetes-friendly rice without variety-specific GI evidence. Instead, its value can be understood across several dimensions: Traditional rice heritage Agricultural biodiversity Distinctive aroma and cooking characteristics Regional identity Starch and nutritional characteristics Its place within a diverse Indian diet Its connection with farming communities For people managing diabetes, the appropriate rice variety, portion size and overall meal pattern should be considered according to individual nutritional needs and professional medical or dietary advice. The larger lesson is perhaps more important than the rice itself. Healthy eating is not about finding one perfect grain. It is about understanding the food on our plate—its variety, its composition, its preparation, its portion and the agricultural system that brought it there. And sometimes, looking forward in food means looking carefully at what India has been growing all along.
